Both rely on wild yeast and bacteria to ferment the sugars in the dough or &lt;em&gt;wort&lt;/em&gt;, rather than on cultivated yeast strains.  The sourness in both is due to the presence of lactic acid, which is produced by the bacteria present.]]></description>
